I have an emulator with a golden sun game and I've heard talk of ripping resources but I can't seem to find how to do this.  Are there any sites out there that can help me with this?

Err, just take a screenshot of the game, and edit out the edges of the sprite/object you're trying to rip. MS paint can get the job done.

Just save it into a good format so the color doesn't get distorted.

such as .JPG

I can't think of anything worse than JPG when ripping sprites, go for PNG.
