Any way to customize / edit the "Sincerely, Tata, etc.?"

I was wondering if there is a way to change the "sincerely, au revoir, tata, etc." at the end of each post. Thanks in advance.

Nope. It changes every time. It's just a temp thing being done for kicks and giggles though, so don't pay it any mind. It'll get removed soon enough.
