How do they do it?

i am no programmer, but I would like to be. i know that rpg maker xp user rgss and ruby or something like that but i would love to know how people create their own custome menu systems etc. because i have great need for this. does anyone know of any decent scripting tutorials or can anyone teach me please. I am a fast learner. much appreciated.
