Alright friends here's how you make SOPHISTICATED HUMMUS

HUMMUS is a Greek/Middle Eastern snack dip made of chick peas and olive oil and some other stuff. It looks strange at first but once you try some you will always know the magic of Hummus.

You will need:
  • 20oz (2.5 cups) of Chickpeas, preferably white, and preferably dry
  • Garlic - Easily obtainable as shaved cloves or whole, typically I use a half of a whole garlic clove because one gives it a really strong taste
  • 3-4 tablespoons of lemon juice, any kind
  • Tahini - This is where it can get tricky, finding tahini in stores can be a real pain in the ass, but it's  necessary.  This recipe is how I make it, and I usually have enough left over for a lot of hummus batches. (http://www.daringgourmet.com/2014/05/21/how-to-make-homemade-tahini-paste/)
  • Salt & Ground Black Pepper - Tap some in, but don't go crazy. I use a sea salt grinder cause that shit's the bomb.
  • 2-3 tablespoons of Olive Oil, also very important for consistency.
  • A BLENDER - A blender or food processor is a must have in a kitchen, if you don't have one then you NEED one in your life. Making food is so much easier with one.
That's a lot right? NO. This shit is so easy that once you have all your ingredients usually you can make TOO MUCH HUMMUS.

Anyway, here's how you do it.

Step ONE:
For best Hummus, take the chickpeas and put them in a closed container full of cold water the night before. The dry chickpeas will absorb the water and be deliciously soft by the morning time.

Step TWO:
Take all of your ingredients, except for the olive oil, and blend them together in your blender/food processor that you need to have. Blend it at a medium speed until it's creamy, but I like hummus a little more chunky. I typically blend it with a quarter of the chickpeas, and add more bit by bit until it's a little lumpier but still blended well together.

Step THREE:
Pour olive oil over the hummus when it's done. Some people, myself included, like to mix in the olive oil afterwards. If you blend it in the processor it will separate chunks of the hummus and it won't come out as well, but a quick spoon churn mixes it pretty well.

Step FOUR:
Eat that shit with some pita/flat bread, especially if you can bake it at a low temp until it's crisp.
