Fat
Muscle (i guess this would be STR but meh)
using a toilet or pissin urself
Drunkness
Reputation
weapon skills (eg blunt skills, blade skills (eg lvl 1 blade skill lets u use crap swords while lvl 10 lets u use good swords) ect)
Speed
Boredom
ingame difficulty control*

*something random i didnt look for*

And a nice bonus:
A CMS built just for this!

That game sounds awful. Just play the Sims.  :P

Some of them I know have been done, and a lot of them could be done through events (Drunkenness, for instance, could be a state that is applied when you use an item, such as aa beer. You could also make stages of intoxication, with varying effects, solely through events). Reputation, weapon requirements, and difficulty control have definitely been done, and it's fairly likely that some of the others have been done as well.
